Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Method

  1. Cook quinoa in water or broth according to package instructions. Let cool.
  2. In a large mixing bowl, combine quinoa, avocado, tomatoes, cucumber, and onion.
