Mediterranean Chickpea Salad

Salad • 15 minutes • Serves 4

Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/3 cup kalamata olives, sliced
  • 1/3 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Method

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, onion, olives, and feta cheese.
  2. In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  3. Pour dressing over the salad and toss to combine.
  4. Garnish with fresh parsley and serve immediately.
