  • 3 cups beef broth
  • 2 tablespoons tomato paste

Instructions

  2. Add beef cubes, season with salt and pepper, and brown on all sides. Remove and set aside.
  3. In the same pot, add the remaining olive oil, onions, and garlic. Sauté until soft and fragrant.
  4. Stir in tomato paste, then return beef to the pot.
  5. Add carrots, potatoes, thyme, bay leaves, and beef broth.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, stirring occasionally, until beef is tender.
  7. Remove bay leaves, adjust seasoning, and serve hot.
